Nestled in the heart of the Catskills, this farm distillery (the gin is literally distilled in the barn on the property) uses whey from local dairy farms to distill for it’s base with closed loop sustainability in mind. The composition of the gin from there looks like a classic dry recipe but it is the attention to detail and the exceptional quality of the seven organic ingredients that delivers quality here that is a significant cut above most. The classics, done well, never get old, and some times in the right place and in the right hands, they become new again.
